China has developed the reputation of producing some of the most unique and high-quality caviars available. This ranges from Oscietra and Beluga caviars to more unique, like the Golden caviar.
The secret behind their quality is that the caviars are produced in a natural environment; specifically at the Thousand Island Lake (Qiandao Lake). This is a man-made lake created in 1959, where the valley was flooded to create the Xin'an River Dam project. This interestingly created the submerged city of Shi Cheng; an ancient city built during the Eastern Han Dynasty.
There are deep pens set up in the natural lake, giving a great amount of room and natural water to produce a healthy sturgeon. This would be one of the primary reasons why the caviars coming for this region are of notable quality.
