Why is caviar so expensive?

Very simple, it is all to do with the fish. Caviar comes from the sturgeon fish and in order to produce the caviar, the fish has to live for 8 years for some breeds like the Baerii sturgeon, and up to 18 years for particular species like the Beluga ( Huso Huso) Sturgeon.

During this time period the fish has to be very well taken care of; the water quality has to be pristine, with the fish requiring good room to swim and to be fed a nutritious diet. All elements of rearing the fish and then processing the caviar are very detailed and intense. This careful process is what makes caviar such a luxurious item.
