Questions regarding Caviar

1. What does roe size mean?

Roe can best be described as the eggs which are extracted from a marine animal. As such caviar is a form of roe from a particular fish, for example, the Russian sturgeon or beluga sturgeon.

The roe size signifies how large the roe's are.

2. What types of fish does your caviar come from?

The caviar which we offer comes from a range of different Sturgeon fish. The Oscietra range of caviar comes from the Russian sturgeon. The Siberian range of caviar comes from the Siberian sturgeon. The Beluga range of caviar comes from the Beluga sturgeon.

3. Where does your caviar come from?

The caviar we source is single origin; this means the caviar comes directly from farms and are not private labelled or blended with caviar from other countries. These farms are located in countries such as Poland and Belgium.

4. How is the caviar taken from the fish?

The fish which provides the caviar which we offer is culled before the extraction takes place. This method is used instead of other methods, for example, live extraction, which arguably has a negative impact on the fish's well being.

It is worth bearing in mind that the fish live a long life, in the case of the Oscietra and Siberian sturgeon they live up to 9 years, where as the Beluga sturgeon lives up to 18 years.
